So how would I hook these suckers up so that it will be stable? One sub per amp.

Easy... one sub per amp, like you said. Each sub is dual voice coil, wire the two voice coils in series, to get 4 ohms per sub. Connect one series-wired sub to each amp, bridged, and you'll get 460 watts RMS to each sub, well within the sub's 500 watt recomended max (Ignore the peak rating, it's meaningless)
